Try this sweet and tart concoction on one of these hot summer days.
Serves 8.

Ingredients:

  • 1 1/2 pounds of pitted & divided cherries (6 cups)
  • 1 cup sugar
  • 3/4 cup lime juice & 2 teaspoons finely grated lime zest
  • Still or sparkling water
  • 1 lime, cut into wedges

Method:

In a medium pot, cover and simmer 1 pound of cherries, sugar and 1 1/2 cups of water for about 20 minutes. The cherries will be tender and have made a fragrant syrup. Wait for it to cool, then puree with the lime juice and zest in a blender.

Make a glass of cherry limeade by pouring about 1/2 of a cup of the puree and 3/4 cup of water/sparkling water over ice in a tall glass. Add some additional cherries and stir well. Garnish with a lime wedge and enjoy.
