If you’re looking for a way to introduce kale to your family, this is a great recipe to start with.

  • 1 bunch Lacinato kale
  • 1 pomegranate (variation: dried blueberries)
  • 1 TBSP roasted sunflower seeds
  • 1 tsp real maple syrup
  • 1 lime (variation: lemon)
  • Liberal olive oil
  • Pinch of Sea Salt

Wash and dry kale.
De-rib the kale and cut into thin ribbons.
Drizzle with liquid components (maple syrup, lime juice, olive oil). Maybe a pinch of salt here.
Hand massage kale until it turns a vibrant dark green and is tender to the touch.
Add pomegranate and sunflower seeds and toss together.
Sea salt to taste.
It’s really that simple, now enjoy!

Looks good! Just did another version with pine nuts, shaved Parmesan and slivered dried apricots-with lemon juice instead of lime and no sweetener. Fabulous!
